A delicious, crunchy Summer salad

Ingredients:
- ½ head of green cabbage, finely shredded
- ½ head of purple cabbage, finely shredded
- 2 cups carrots, julienned
- 1 red capsicum, julienned
- 1 cup fresh coriander, chopped
- ½ cup sliced green onion
- 2 cups cooked and shelled edamame
- 1–2 cup roasted cashews
- For the Dressing:
- ¼ cup olive oil
- 3 tbsp white vinegar
- 2 tbsp sesame oil
- 2 tbsp sugar
- 1 tsp salt
- To Serve:
- 1 tbsp toasted sesame seeds
How to make:
- Toss all the salad ingredients together in a bowl.
- Place the dressing ingredients in a jar and shake until smooth. Drizzle dressing over salad, sprinkle with toasted sesame seeds and serve.
