A delicious, crunchy Summer salad

Ingredients:

  • ½ head of green cabbage, finely shredded
  • ½ head of purple cabbage, finely shredded
  • 2 cups carrots, julienned
  • 1 red capsicum, julienned
  • 1 cup fresh coriander, chopped
  • ½ cup sliced green onion
  • 2 cups cooked and shelled edamame
  • 1–2 cup roasted cashews
    For the Dressing:

  • ¼ cup olive oil
  • 3 tbsp white vinegar
  • 2 tbsp sesame oil
  • 2 tbsp sugar
  • 1 tsp salt
    To Serve:

  • 1 tbsp toasted sesame seeds

How to make:

  1. Toss all the salad ingredients together in a bowl.
  2. Place the dressing ingredients in a jar and shake until smooth. Drizzle dressing over salad, sprinkle with toasted sesame seeds and serve.
