Celebrate World Happiness Day by getting the kids in the kitchen and making a recipe the whole family can enjoy

  • 1 cup Community Co almond meal
  • ¾ cup Community Co walnuts
  • 2 carrots
  • 100g butter blend spread. We loved Community Co Butter Blend spread
  • ¼ cup coconut milk
  • 2 free range eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg

For the icing

  • 1 ⅕ cup shredded coconut
  • ½ cup butter, cubed
  • Juice and rind from 1/2 lemon
  • 1 tsp vanilla extract
  • ½ cup walnuts, chopped for topping

How to make it:

  1. Preheat the oven to 160C. Top tip: take your butter out of the fridge and let it soften. it’ll be much easier to work with!
  2. Grate carrots and set aside
  3. In a bowl, combine all dry ingredients, then add in the wet ingredients and carrot
  4. Grease 2 baking tins with butter and flour and pour in the batter. Bake for 30 mins or until you can put a knife in the center and it comes out clean
  5. Cool for 10 mins in the tin, then turn upside down on a wire rack
  6. In the meantime, pour coconut into a food processor and whiz until fine
  7. Add the butter and continue to process until creamy, then add the lemon juice and rind
  8. After the cakes have cooled, spread ½ the icing on one of the cakes, stack the other on top, then top with the rest of the icing and a sprinkle of walnuts
