Ingredients

1Pork Tenderloin or Pork Collar Butt (Pork Scotch)
1/4Cup of Extra Virgin Olive Oil
1Teaspoon of Smoked Paprika
1/2Teaspoon of Salt
1/4Teaspoon of Pepper
3Teaspoon of Cumin
2Teaspoon of Onion Powder
2Teaspoon of Garlic Powder
5Sprigs of Thyme
2Cups of Salt Reduced Chicken Stock
2Apples, grated
2Onions, grated
4Cloves of Garlic, crushed
2tbsp worcestershire sauce
3Tablespoons of Tomato Paste
2Tablespoons of Cider Vinegar
2Lettuce Heads
1/4Red Cabbage, shredded
1/4Green Cabbage, shredded
1Bunch of Coriander, chopped
2Tablespoon of Apple Cider Vinegar

Method
Preheat the oven to 130C.
In a bowl, mix the olive oil, onion, garlic powder, cumin, smoked paprika, salt, pepper and thyme. Pour spice mix over pork and massage into the meat.
Using a heavy based ovenproof pan, add the onions, garlic, apple, chicken stock, tomato paste, worcestershire, and cider vinegar with the spiced pork.
Place in the oven for 5-6 hours or until the pork is soft and tender.
Remove from heat, and using a fork shred the meat, keeping the pulled meat in its juices.
To make the coleslaw, mix the red and green cabbage in a large bowl with the chopped coriander. Add the apple cider vinegar, season with salt and pepper and toss.
Serve pulled pork on lettuce cups, topped with the simple cabbage slaw.
