In need of some breakfast of lunch inspiration? Try this healthy alternative which is prefect for meal prep and is delicious when served with a side of crusty bread or a simple salad.

Ingredients

4 Serves*
8 eggs
1/3 cup grated zucchini (squeezed of excess liquid) + 1 extra for garnish
120 g self-rising flour
1 1/3 cup grated cheddar cheese
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

Method

  1. Preheat oven to 180C. Line a 20 x 30cm baking dish with baking paper.
  2. In a large bowl, whisk the eggs, until light and fluffy, 2 – 3 minutes.
  3. Add the remaining ingredients and season.
  4. Pour the contents into the prepared dish.
  5. Bake for 30 minutes or until nice and brown. Allow cooling before slicing to serve.

    Tried this one. Easy and tastes great. Can add extra things like ham, Tomatoes, or what every you want to add. Remember to squeeze out the juice from zucchini.

    With this being the basic recipe I add a 425g tin of Tuna, grated sweet potato, chopped onion and a tin of sweet corn kernels. By the time all that is in the bowl I need to add more eggs and divide it into an extra dish! It freezes well too.

    Easy peasy, very tasty, can add tomato, ham or bacon. Takes me back to the days when my children and grandchildren bought the “school recipe book” home and we all loved it. They now use similar recipe

    I have been making this for years. I usually add in chicken, tomato and sometimes corn. Being gluten free it is easy to use free range eggs and gluten free flour. I absolutely love it for a meal or a snack.
