Quick n Easy Meatloaf

Bring the family together with this quick and easy Meatloaf.

Ingredients

4 Serves*
500 g beef mince
3 eggs
100 g breadcrumbs
90 g tomato paste
1 tbsp tomato paste (extra)
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

Method

  1. Preheat oven to 180°C. In a large bowl mix all the ingredients and season well with sea salt and cracked pepper.
  2. Into the base of a loaf tin, spread the reserved tomato paste. Spoon the mince mixture into the tin.
  3. Bake for 45 minutes or until lightly browned on top. Remove from the oven and let sit for 10 minutes before slicing to serve.

    Never had meatloaf before so tried this recipe and was very surprised!! Yummo!

      Firstly it was yummo, however, line the baking with baking paper, avoid a lot of issues (silly me). Instead of tomato paste, I used veggie rice (cauliflower, carrot, broccolli). Loved it.

    Yep as stated, Tried the meatloaf recipe and was pleasantly surprised. Never had meatloaf before but will add this to my go to recipes – Meatloaf is yummy

    I would add a tablespoon of dried mixed herbs to this recipe to make it perfect.

    Another recipe just as fantastic as that one is to put a brown onion into the mixture and some mixed herbs, garlic, tomato sauce and 2 eggs plus breadcrumbs mix it all up put it into the loaf pan and then follow the instructions…better to make a sauce to go on top of it as well…tomato sauce, sweet soy sauce, sweet mustard sauce then pour over the meatloaf and bake…

    Love this recipe, I added a couple cloves of garlic, finely chopped onion & grated carrot. I have cooked it with the tomato paste but I have also tried it using Sweet Chilly sauce….both are really yummy

    Just to get the Healthy Seal of Approval chuck in a handful of mixed vegetables.
    Breadcrumbs are also great if you need to feed a few more.
    Used to have it cold on sandwiches when I was a kid.

    made this first time,i added grated carrot,grated onion,celery and eggplant,with fresh parsley worstshire sauce and garlic ,turned out tasty and yummy
