Used a tablespoon of honey with sea salt and lemon juice. Cooked in an air fryer instead of an oven as less fat.
Please advise if putting the vegetables in with the pork, will stop the pork from crackling?

A high oven temp at 250 degrees for first 30 minutes should do the crackling trick!
