Peach, Watermelon and Feta Salad

  • 4 Serves
  • 15 minutes



2 ripe peaches, pitted and cut into wedges
2 cups watermelon, rind removed and cut into wedges
½ cup red cherry tomatoes, halved
½ cup yellow cherry tomatoes, halved
½ cup feta cheese
2 tbsp pistachios
¼ cup mint leaves
¼ cup basil leaves
2 tbsp balsamic vinegar
1 tbsp Extra Virgin olive oil
1 tsp honey
Salt & pepper to season


  1. Arrange the tomatoes, watermelon, peaches & feta on a platter. Scatter the mint and basil leaves amongst the fruit. Sprinkle the pistachios on top.
  2. Whisk the balsamic vinegar, olive oil, honey together in a small bowl, season with salt and pepper to taste.
  3. Drizzle the dressing over the salad and serve.
