Little Lemon Cheesecakes

These will be the easiest and most divine little cheesecakes you have ever made.

Ingredients

10 Serves*
250 g cream cheese softened
280 g jar MasterFoods Lemon Butter
200 g packet Butternut Snap biscuits
250 g fresh strawberries halved
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

Method

  1. Line 10 holes of a muffin tray with paper shells. Place a buttersnap biscuit, flat-side up, into each.
  2. In a large bowl, using an electric beater, beat cream cheese and lemon butter until smooth and velvety. Spoon the mixture evenly across the 10 biscuits.
  3. Freeze for at least 3 to 4 hours. To serve, remove the paper shell and garnish each with strawberries.

    Yes I did enjoy the little lemon cheesecake recipe and I will enjoy making them, but carnt promise on how long they will last as they look so divinely yummy ๐Ÿคค ๐Ÿ˜‹

    I have made these mini cheesecakes several times and as many contributors have said they donโ€™t last long! I have substituted the strawberry topping with passion fruit pulp.

    I have made these a few times, and the last three times, I find that the mixture is too runny. What am I doing wrong? I’m using a hand held electric mixter. Thank you for your help. PS they still taste good but they don’t look good.
