A perfect go to drink for summer. Whip up a pitcher of this refreshing mocktail for your next dinner party.

Ingredients

2 Serves*
4 cups seedless watermelon, roughly chopped
1 cup sparkling apple juice
1 lime
mint leaves
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

Method

  1. Add roughly chopped watermelon, 2-3 mint leaves, 2 tbsp lime juice to a blender and blend until you reach a smooth consistency.
  2. Optional: strain if you desire a smoother juice.
  3. Pour juice halfway of cocktail glass over several ice cubes and top with sparkling apple juice.
  4. Garnish with additional mint leaves and lime slices.

Easy Swap

Swap watermelon with passionfruit or any red berries for an alternative take on this summery mocktail. Or add a splash of vodka (adults only).

Top Tips

Cut any leftover watermelon into cubes and freeze to make watermelon ice cubes.
