Ingredients

130-150 g any leftover cheese

1 garlic clove

1/4 cup dry white wine or chicken stock

A sprig of fresh thyme

Freshly ground pepper to taste

Method

Place all the ingredients into a blender or food processor until smooth and creamy. If you are using mostly hard cheese, add more wine or stock for a smoother consistency.
This can be served as a dip or spread over a baguette and placed under the grill for a delicious snack.
