Method

1. Preheat oven to 200C.

2. Line a baking tray with baking paper.

3. Place the lamb mince, feta cheese and finely chopped rosemary in a bowl. Season with sea salt, pepper and mix well.

4. Use a sharp knife to cut each pastry sheet down the middle (creating 4 long lengths).

5. Place a quarter of the mixture down the centre of each pastry half

6. Roll to enclose and place seamed side down.

7. Sprinkle with sesame seeds and cut each roll into quarters.

8. Place onto the prepared tray.

9. Cook for 20 minutes or until golden and crispy.

Notes

OPTIONAL:

If entertaining, brush the pastry lightly with the whisked egg and sprinkle with poppy seeds or sesame seeds. This will produce a really lovely golden finish.

If you want to add more vegetables, add some spinach or grated carrot.

For a meat free option, substitute pumpkin for lamb mince.

NOTE: Lamb mince is often quite oily. You may need to bake these on a cake rack on a baking tray and allow the oil to drip down. Or, turn halfway through, mopping up any excess oil.
