Tostitos Restaurant Dips & Chips
Tostitos Chilli Pork Nachos

PREP: 5 mins    COOK: 25 mins    SERVES: 4

INGREDIENTS:

1 tablespoon olive oil
1 brown onion, peeled and diced
2 cloves garlic, minced
500g pork mince
¼ cup tomato paste
35g packet of taco seasoning
425g canned pinto beans

1 cup grated tasty cheese
1 ripe avocado, flesh diced
125g grape tomatoes, halved
1 bunch coriander, leaves picked
100ml sour cream
Sliced jalapenos and lime wedges to serve

METHOD:

1. Preheat oven 180°C. Put four oven proof dishes on a baking tray.

2. Heat a large frying pan over a medium to high heat and add oil, onion and garlic. Cook until the onion is soft and translucent; add pork mince and cook until browned all over then add tomato paste, taco seasoning and pinto beans. Cook for a further 5 minutes then remove from heat. Season with salt and freshly ground black pepper.

3. Divide the mince mixture between the dishes. Arrange Tostitos Restaurant Style Mild Mexican Salsa Corn Chips in the mince mixture then top with the grated cheese. Transfer to the oven and cook for 10 minutes or until the cheese is golden brown. Remove from heat.

4. Top with avocado, tomatoes, coriander and sour cream. Garnish with lime wedges and jalapenos.
