Halloween Pumpkin Muffins with Kinder Chocolate

Ingredients

  • 12 cup muffin tin
  • 12 cupcake liners
  • 2 eggs
  • 100g sugar
  • 230g pumpkin puree
  • 90mL canola oil
  • 280g flour
  • 1/4 teaspoon salt
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 12 bars Kinder Chocolate (=150g)
  • 15g icing sugar to decorate

To decorate you will need:

  • 12 cup muffin tin
  • 12 cupcake liners
  • White tissue paper
  • 12 toothpicks
  • A black pen

Method

  1. In a large bowl, mix the eggs, sugar, pumpkin puree and oil. Add the dry ingredients: flour, salt, bicarb soda, baking powder, vanilla essence, nutmeg, cloves and cinnamon. Stir well.
  2. Cut Kinder Chocolate into small pieces. Set aside 12 pieces, then stir the remaining pieces into the batter. Line muffin tray with cupcake liners. Spoon the batter evenly into each liner. Bake at 180 C for 25 minutes, until golden brown.
  3. While the muffins are baking, it’s time to create our decorative ghosts! Cut 12 squares of tissue paper, approximately 10x10cm each. Then with a separate piece of paper, scrunch up 12 pieces of paper into balls. Stick a toothpick into a paper ball, then place in the centre of a tissue paper square. Twist & pinch to create the head shape. Draw on the eyes and mouth in black pen. Repeat to create 12 ghosts (one for each muffin).
  4. Once baked and cooled, remove the muffins from the tray and dust with icing sugar. Press one piece of Kinder Chocolate into the centre of each muffin.
  5. Complete your spooky treats by using the end of the toothpick to stick a decorative ghost into each muffin.

MARS® Halloween Mini Cupcakes

Difficulty : Medium Prep Time : 20 mins  Cooking Time: 12 mins  Servings: 24 cupcakes

Ingredients

  • 60g butter, unsalted, room temp
  • 65g caster sugar
  • 2 eggs
  • 65g sour cream
  • 80g full cream milk
  • few drops of black gel food colouring
  • 90g plain flour
  • 30g cocoa powder
  • 1/4 tsp bicarb soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 MARS® fun size bars, cut each into 6 pieces

Cream Cheese Frosting & Decorations Ingredients:

  • 120g white chocolate, melted
  • 190g cream cheese, softened
  • few drop black gel food colouring

Method

  1. Preheat oven to 160°C fan forced and line a mini muffin tin with 24 paper liners.
  2. In a medium bowl, beat the butter and sugar with a handheld mixer or stand mixer until light and fluffy, about 3 minutes. Add the eggs, one at a time, then the sour cream, and milk.
  3. Sift together the flour, cocoa powder, baking powder, baking soda, and salt. Slowly add the flour mixture to the egg mixture and fold gently until just combined.
  4. Place a piece of MARS® in the base of each cupcake line and top with a spoonful of batter until the liner is 3/4 full.
  5. Transfer to the oven and bake for 10-12 minutes or until the top springs back when gently pressed. Remove from oven and allow to cool completely.
  6. Frosting & Decorations Method:
    1. To make the spider web decorations, melt 50g white chocolate and place in a small piping bag or zip lock back. Snip a small hole in the bag, and on a piece of baking paper, pipe spider webs 4-5cm in diameter. Place in the fridge to set while you prepare the frosting.
    2. To prepare the frosting, melt the remaining white chocolate in the microwave in short 20-30 sec bursts, stirring in-between.
    3. Add cream cheese to the stand mixer bowl and whip until soft and smooth. Drizzle in melted white chocolate and add a few drops of black gel food colouring, then whip with the mixer until combined.
    4. Transfer to a piping bag fitted with a 1M piping tip, and pipe swirls of frosting on top of each cupcake. Top each with a spider web.

Zombie SKITTLES® Creepy Black Jelly Cups

Difficulty : Medium Prep Time : 15 mins  Cooking Time: 15 mins (not including setting jelly)  Servings: 6

Ingredients

  • 1 packet (86g) natural blackcurrant jelly powder
  • 1 packet (86g) natural orange & mango jelly powder
  • 30g rottem zombie skittles®

Method

  1. In a medium bowl make blackcurrant jelly as per packet instruction then pour into a rectangular baking dish and refrigerate for a minimum of 4 hours to overnight.
  2. In another medium bowl make orange and mango jelly as per packet instructions, then pour into another rectangular baking dish and refrigerate for a minimum of 4 hours to overnight.
  3. When the jelly is set, remove each from the baking dishes and cut into 2cm cubes.
  4. Divide the orange and mango jelly between 6 glasses and then top with the blackcurrant jelly.
  5. Top with rotted zombie skittles. Serve immediately.

Chocolate Skeleton Cupcakes

Total Cooking Time: 1 hr 15 mins  Servings: 24 cupcakes

  • 1 box Betty Crocker™ Super Moist™ Devil’s Food Cake Mix
  • 1/3 cup (80ml) vegetable oil
  • 3/4 cup (180ml) water
  • 3 extra large eggs

To decorate:

  • 1 tub Betty Crocker™ Creamy Deluxe™ Vanilla Frosting
  • 2 tubes black writing icing

Method

  1. Preheat the oven to 180°C (160°C for fan-forced oven). Line 2 x 12-hole muffin trays with paper cases. Remove the enclosed frosting sachet from the cake mix and reserve for another use. Make, bake and cool the cake mix as directed for muffins on box.
  2. Using a small spatula spread the frosting on the top of the cakes. Use the tube of black writing icing to pipe spooky big eyes, dots for nostrils and a smiling skeleton mouth.

Spooky Ghost Cupcakes

Total Cooking Time: 1 hr 25 mins  Servings: 12 cupcakes

  • 1 box Betty Crocker™ Super Moist™ Devil’s Food Cake Mix
  • 1/3 cup (80ml) vegetable oil or 125g butter melted
  • 3/4 cup (180ml) water
  • 3 extra large eggs

To decorate:

  • 1 tub Betty Crocker™ Creamy Deluxe™ Vanilla Frosting
  • Red or orange sugar sprinkles and chocolate sprinkles
  • 1 tube black writing icing or sugar Eyeball decorations

Method

  1. Preheat the oven to 180°C (160°C for fan-forced oven). Line 1 x 12-hole muffin trays with paper cupcake cases.
  2. Make, bake and cool the cake mix as directed for cupcakes on the box.
  3. Using a small spatula spread the chocolate frosting contained within the cake box, on the top of the cakes. Scatter some red or orange and chocolate sprinkles over the top of each cake.
  4. Spoon the vanilla frosting into a large disposable piping bag and snip off the end. Pipe 2 blobs of frosting with peaks on top of each cake for ghosts. Use black writing icing, cake pens or melted chocolate to draw on eyes and mouths. If you don’t have black icing, use chocolate sprinkles or place sugar eyes on each ghost. Be creative with their faces, maybe even getting the kids to help.

Tips:

  1. Colour the vanilla frosting with orange or green food colouring gel to create neon ghosts!
  2. To get the piped ‘ghosts’ to peak, quickly lift the piping bag away at a slight angle after piping each blob.

Halloween Frankenstein Brownies

Total Cooking Time: 1 hr 25 mins  Servings: 12

  • Vegetable oil, for greasing
  • 1 box Betty Crocker™ Triple Chocolate Brownie Mix
  •  125g butter, melted
  • 2 extra large eggs

To decorate:

  • 150g Betty Crocker™ Creamy Deluxe™ Vanilla Frosting
  • Green food colouring paste or gel
  • 24 red sugar-coated mini chocolate beans
  • 1-2 teaspoons chocolate sprinkles
  • 1 small tube black writing icing
  • 12 short pieces liquorice, halved

Method

  1. Preheat the oven to 180°C (160°C fan forced). Grease a 20cm square shallow cake pan and line the base and sides with baking paper.
  2. Open the brownie box, remove enclosed frosting sachet and reserve for another use. Mix the brownie mix, butter and eggs together in a bowl until well blended. Spread the mixture evenly in the prepared cake pan and bake for 20-22 minutes or until a round-bladed knife inserted into the centre comes out almost clean. Remove from the oven. Transfer to a wire rack and leave to cool completely in the pan; about 30 minutes.
  3. Lift the brownie from the pan using the baking paper. Cut the brownie into 12 rectangles.
  4. Place the frosting in a medium bowl and use the green food colouring paste or gel to colour the frosting bright green. Spread the frosting over each brownie.
  5. Place 2 red chocolate beans on each frosted brownie for eyes. Sprinkle the tops of the some of the brownies with chocolate sprinkles for hair. Use the black writing icing to dot on the pupils of the eyes and to pipe on mouths, extra hair and stitches on the faces. Push 2 pieces of liquorice into the side of each brownie for bolts. Serve immediately or keep in a cool place for up to 2-3 days.

Ingredients

  • Chupa Chups Best Of 25u Bag
  • Chupa Chups Sour Bites 10u Bag
  • 1 cup of plain flour
  • ½ cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • 1 cup caster sugar
  • 1 tsp of salt
  • ½ cup milk
  • 1 tsp vinegar
  • ½ cup of canola oil
  • 2 eggs
  • White rolling fondant
  • Black food gel

Method

  1. Sieve the flour, cocoa powder and baking powder together in to a large mixing bowl. Add the caster sugar and 1 tsp of salt then set aside
  2. Add ½ cup of milk, 1 tsp vinegar, ½ cup of canola oil and 2 eggs to another mixing bowl and whisk. Combine the 2 bowls and whisk together
  3. Add ¼ cup of boiling water and whisk. Evenly distribute the mix in to 12 cup cake cases
  4. Bake for 20 mins at 170c
  5. Frost the cake with your favourite frosting then carefully place the Sour Bites pieces to cover the cake top
  6. Unwrap a Chupa Chups lollipop and place in the centre of the cake
  7. Roll out the white rolling fondant and use a circle cutter to cut in to approx. 8cm/3.14 inch circles
  8. Wrap the icing over the top of the lollipop and position in to your best ghost shape
  9. Use a sharp object such as a cocktail stick to mark the eyes

What will you need:

  • Tissues and/or coloured tissue paper (varied colours – depending on chosen characters
  • String
  • Small elastic bands/hair bands
  • Extra props for character features (pens, googly eyes, coloured card)
  • Glue
  • Scissors
  • Black food gel

Instructions:

  1. Choose your favourite Chupa Chups lollipop
  2. Grab 2x pieces of tissue or tissue paper
  3. Cut one tissue/tissue paper in to 4 equal squares. Keep one and set the other 3 aside for your next creation!
  4. Place the cut 1/4 tissue section directly in the middle of the full piece of tissue, and wrap over the top of the lollipop with the ¼ on the inside
  5. Tie under the base of the lollipop ball with an elastic band to keep in place
  6. Tie string around the neck of the character
  7. Now time to get creative and give your stick some character! Mark eyes and other features on to the character – For extra props, you can add a witches hat or cape!
