  • 35g butter
  • 2 leeks sliced
  • 1 brown onion finely chopped
  • 1 tbsp minced garlic
  • 600g potatoes, peeled and chopped
  • 3 cups chicken stock
  • ½ cup thickened cream
  • 2 tbsp chopped chives
  • Salt and pepper to taste

How to make:

  1. Melt the butter and sauté leeks, onion and garlic until soft and translucent.
  2. Add potatoes and cook for an extra 5 minutes.
  3. Add stock and simmer uncovered until potatoes are tender. Remove from heat and puree.
  4. Return to heat and add cream.
  5. Bring to the boil. Remove from heat and season with salt and pepper.
  6. Top with fresh chives before serving.
